2 eggs – well beaten

1 cup milk

1 tsp. salt

2 tbsp. roast fat

One cup flour

1/2 tsp baking powder

Beat all ingredients very well – fill greased muffin tins no more than full.  Preheat oven to 450 – bake in center of the oven. (Yes...this is important) for 20 mins.

 

This was my Mother-in-laws recipe.  Using muffin tins to make the puddings turns them into individual cups ... and a wonderful excuse to fill the little morsels full of gravy.  Make them while your roast is "setting" and you're preparing the gravy.  Make lots.... they'll go fast

Preheat Oven To: 450

Yield:  12 Yorkshires

Serve With:  Roast Beef.
