2 onions – quartered

4 stalks celery – diced large

Approx. 1 cup snow peas

1 large can tomatoes

1 green pepper – sliced

1 can mushrooms – drained or about 10 fresh button mushrooms

tsp. basil

tsp. garlic powder

2 tbsp. parsley

1 tsp. salt

Fresh ground black pepper to taste

2 tbsp. Worcestershire sauce

1 cup grated cheddar cheese

cup Parmesan cheese.

Finally, I was in my very first "all mine" apartment and I had no one to cook for but me.  This was my first conquest and a mighty fine one if I might say so myself.  It's a wonderful meal and freezes well.

Serve it topped with cheese and croutons...yum!

Serves:  2

Serve With:  Dry red wine and Whole wheat baguette.

Combine vegetables and seasonings in a large pot.  Bring to boil and lower heat, cover and simmer for hour.  Add cheese and simmer 10 mins.  Serve hot in onion soup bowls.
