3 cups defatted beef stock
1 cup frozen cheese or meat tortellini
1 cup frozen peas
2 tbsp. chopped sun dried tomatoes
3/4 tsp. dried basil or 2 tbsp. fresh chopped
1/4 tsp. dried oregano or 1 tbsp. fresh chopped

Serve With: A platter of assorted Olives, marinated peppers, Italian bread and red wine.
In medium saucepan, combine the stock, tortellini, peas, tomatoes, basil and oregano. Cover and bring to a boil, then reduce the heat. Simmer for 5 to 6 mins or until the tortellini are tender.
