1 heaping tbsp. peanut butter

1 small can coconut milk

1 Tbsp.curry paste OR 2 tsp. curry powder and 1 tsp coriander

cup cooking wine – white

1 tbsp. brown sugar

1 large onion shipped

1 large carrot – grated

Mix all ingredients together and pour over chicken or your choice or meats.  Microwave on medium-high  for approx. 15 mins or bake at 350 degrees until chicken is tender and cooked through. 

 

This is my own recipe.  I really enjoy Tia food and sometimes you just gotta have it (even when going out to dinner is out of the question).

Preheat Oven To: 350 or microwave

Serves:  2 - 4

Serve With:  Mango chutney spinach salad and Curried couscous or Sweet vegetable couscous or over a bed of simple steamed rice or ramen noodles.
