8 bluefish fillets – thawed

Stuffing

4 or 5 pieces slightly stale bread – broken into very small pieces

4 tbsp. finely chopped onion

2 –3 tbsp. finely chopped celery

juice of ½ lemon

¼ cup dry white wine

sprinkle of garlic salt

¼ tsp. cumin seed

Dash of black pepper

2 tsp. sage

¼ cup butter

¼ cup applesauce

This is a recipe I created one night when unexpected company showed up for dinner.  It turned out so well, I've kept making it.

Preheat Oven To: 350

Serves:  4

Serve With:  Dry white wine, Lemon Couscous or Saffron rice and Minted peas .

Melt butter and sauté onions, pepper and celery. Add all other ingredients and mix well.

Top 4 filets with ½" - ¾ " of the stuffing mix.  Cover with remaining fillets and tie gently to "sandwich" the stuffing.  Brush with butter and sprinkle with paprika

Bake at 350 for approx. 30 minutes or until the fish is moist and flaky.
