2/3 cups olive oil

cup wine vinegar

1 tsp. tarragon

1 lb. bacon (reserving 2 tbsp. bacon drippings)

2 cloves garlic – crushed

1 tsp. salt

tsp. pepper

lb. bacon

2 - 10 oz bags spinach

Serves: Many - Take this to a party, or throw your own. 

Broil bacon until crisp, drain and roll between paper towels, crumble.

Whisk together oil, vinegar, tarragon, bacon drippings, garlic, salt and pepper. 

Clean and devein spinach, pat dry.

Toss everything together and serve immediately.
