Rice Paper Rolls

Rice Paper Rolls with spicy passion fruit sauce

8 - 6 inch round rice paper sheets

2 oz bean thread vermicelli

3 medium carrots, julienned

1 red pepper, julienned

2 green onions, julienned

½ cup bean sprouts

8 fresh mint leaves

8 leaves fresh coriander

Spicy Passion fruit sauce

1 tbsp. honey

½ cup passion fruit nectar

1 tsp. fresh ginger, finely grated

2 chili peppers, finely chopped

Juice of ½ lime

2 tbsp. Soya sauce

¼ cup roasted fresh peanuts, chopped.

Serves:  8

Soak bean threads in hot water about 1 hour or until tender.  Drain excess water and set bean threads aside.

Working with one rice paper at a time, dip in water and remove quickly.  Set on counter to soften slightly.  Place small amount of each vegetable in center of sheet.  Add small amount of bean threads.  Top with one leaf of coriander and mint.  Tuck sides into center and roll tightly.  Repeat with remaining rice papers.  To store rolls in refrigerator: cover with moistened paper towels and plastic wrap

To prepare Sauce:

In small saucepan, combine honey and nectar and boil until slightly reduced, about 3 to 5 minutes.  Remove from heat and cool slightly.

Add ginger, chili peppers, lime juice, Soya sauce and peanuts.

Sauce can be made in advance.
