2 cups mashed potatoes

½ cup flour

1 cup milk

½ tsp. salt

½ tsp. parsley

½ tsp. baking powder

Grated cheddar

1 tsp. olive oil

1 tsp. butter

 

So what else do you do with left over mashed potatoes?

Mix potatoes with flour, milk, salt, parsley and baking powder.

Melt butter and oil in fry pan.  Heat thoroughly and add above mixture by the ¼ cup full. Fry until lightly browned on both sides, flipping only once. Sprinkle with cheese and serve immediately with a dollop of applesauce and sour cream
