2 cups frozen peas
1 tbsp. dried mint leaves
1 tsp. Butter
½ tsp. salt
Toss all above in a saucepan, pop the lid on and simmer over medium heat, stirring occasionally, until the peas thaw. Reduce heat to low and gently simmer for 10 minutes. The
peas "steam" in the moisture that the thawing process provides so low heat is very important. Remember to keep an eye on them because they will be done just about the same time that they run
out of moisture and few things smell as bad as burned peas.
