1 lb. dry white navy beans (about 2 cups)

1 cup Maple syrup

cup chili sauce

1 onion, chopped

2 tsp. Salt

1 tsp. dry mustard

3 slices bacon, cut into 1 inch pieces

2 cups boiling water

This recipe was found at one of those sugar bushes that have a great pancake house and a tour of the maple sugar operations. They are simply the best beans ever made.

Preheat Oven To: 300

Serves:  8

Serve With:  Cold Beer, and fresh baguette.

Place beans in large saucepan, cover with water and bring to a boil.  Simmer for 2 minutes. Remove from heat and let stand, covered for 1 hour.  Drain

In a small bowl, combine maple syrup, chili sauce, chopped onion, salt and mustard.  Place half the beans in 1 quart casserole, top with diced bacon, then remaining beans.  Pour syrup mixture over beans.  Add boiling water.  Cover and bake at 300 for 6 – 7 hours, adding more water as needed to keep beans moist.
