1 cup rolled oats

1 cups lemon or plain yogurt

2 cups all purpose flour

cup granulated sugar

1 tbsp. baking powder

1 tsp. salt

cup melted butter

cup lemon juice

grated rind of 1 lemon

1 egg

 

Preheat Oven To: 400

Yield: 1 dozen muffins

Soak oats in lemon yogurt just to moisten.  Combine flour, sugar, baking powder and salt.  Add melted butter, lemon juice, lemon rind and eggs to oatmeal mixture.  Stir oatmeal mixture into dry ingredients.  Fill muffin cups full.  Sprinkle tops with mixture of sugar and cinnamon.  Bake at 400 for 15 – 20 minutes
