1 cup shortening

1 cup sugar

3 eggs

1 cup molasses

2 tbsp. vinegar

5 cups flour

1 tsp. baking soda

tsp. salt

2 – 3 teaspoons ginger

1 tsp. cinnamon

1 tsp. cloves

I don't know anyone who actually likes gingerbread cookies but they're such fun to decorate.  You can make ornaments for your Christmas tree or build a gingerbread house complete with candy cane trees and snow covered roofs (See recipe for Royal Icing) or, hey... go nuts, build a whole dam village.  Now that's therapy!

Preheat Oven To: 375

Mix together shortening and sugar. Add eggs, molasses and vinegar.  Mix well.  Sift together flour, soda, salt, ginger, cinnamon and cloves.  Add this mixture to the shortening mixture. Mix until it forms a dough.

Chill dough at least 3 hours.  Roll out dough 1/8 inch thick.

For cookies...cut with cutters and bake on greased baking sheet 5 – 6 mins at 375

For House – cut in squares and bake on greased baking sheet approx. 10 minutes...
