Fresh Tomato Sauce

4 or 5 large ripe tomatoes – chopped

2 Italian sausages – sliced ¼ inch thick

1 cube pesto (See Pesto Recipe)

Brown sausage, drain off fat.  Add tomatoes and pesto, bring to a boil and reduce heat to low.  Simmer uncovered for 20 - 30 minutes, until thickened.

When tomatoes are in season, there is nothing quite like a fresh tomato sauce on your pasta.  It's a seasonal treat, but freezes well.  So when the vines are heavy with big juicy bounties, pick 'em!

Serves: 4

Serve With:  Over any pasta, sprinkled with cheddar or parmesan cheese, Dry red wine and fresh white baguette bread sticks
