1 onion,

3 large shiitake mushrooms (or dried mushrooms soaked for 30 minutes) - sliced

5 sun dried tomatoes - soaked for 30 minutes in warm water and sliced

1 jalapeno pepper (or maybe not if you're a chicken)

5 large prunes - sliced

1 - 2 tbsp. Curry Paste

Orange or apple juice

This is also great with dried apricots and maybe an apple, celery, peppers (red, yellow, or green – especially if they've been bar-b-que'd), broccoli stems or whatever.  It's a great base for whatever you want to use up.

This is the ultimate fast food.  If you have left over rice, couscous, or bulgar, throw it on top by the tablespoon full and warm it up.

This is a wonderful vegetarian recipe that came into being when I decided to go vegetarian and California decided to have a bad crop year.  These are all things that tend to get left in the pantry unused.  Now you can use 'em

Serve Over:  Rice, bulgar, couscous

Throw it all in a microwavable dish and fill just to almost cover the fruits and veggies with orange or apple juice.  Cover tightly and zap in on high for 15 - 20 minutes stirring occasionally.
