1 cup Couscous, prepare as per package directions

 

1 large carrot – grated

1 large onion – diced

1 celery stalk – diced

cup raisins

Approx. cup apple juice (to just cover vegetables)

2 tbsp. butter

2 tbsp. curry paste (or 1 tbsp. curry powder and 1 tbsp. coriander)

2 tsp. salt

I like to serve this in baked pepper squash halves. 

Serves: 4

Place all ingredients except couscous in a microwave-safe container with a tight fitting cover, (or cover with microwave-safe plastic wrap), stir well and microwave on high for approx. 10 minutes.  When vegetables are very soft, remove and mix with prepared couscous
