1 cups water or chicken stock

1 lb. asparagus – cut into 1 inch bits

1 onion finely chopped

2 potatoes chopped

2 tsp. lemon juice

1 cup milk

1 pinch nutmeg.

 

This is my sister Susie's recipe.  I had lunch there one day and went away craving this soup for months

Serves:  4

Serve With:  Crackers & cheese, warm baguettes.

Simmer potatoes and onions in stock for 5 mins or until potatoes are tender.  Add asparagus and simmer 5 mins. Remove asparagus tops and reserve in cold water for garnish.  Blend asparagus/potato/onion mixture until smooth.  Add nutmeg and lemon, stir in milk.  Heat until just to boil.  Serve with saved tips and parsley as garnish
