1 cups cornmeal

1 cup flour

1/3 cup sugar

1 tsp. salt

1 tbsp. baking powder

2 eggs

6 tablespoons melted and cooled butter

8 tbsp. melted and cooled vegetable shortening

1 cups milk

Preheat Oven To: 400

Yield: 1 loaf

Sift cornmeal, flour, sugar, salt and baking powder.

 Beat the eggs lightly, add the melted butter and shortening and stir in the milk.  Add to the dry ingredients and beat together for about a minute or until smooth. Do not over-beat.  Pour into lightly buttered and floured loaf pan and bake approx. 45 minutes at 400 degrees
