Butt pork roast,  roasting chicken or duck

1 tsp. salt

Black pepper

Garlic powder

Soya sauce

tsp. Five spices powder

1 tsp. Hoi Sin sauce or 2 tsp. brown sugar

Cut slashes into pork or chicken to lessen cooking time.  Mix all other ingredients together to make a paste the consistency of catsup.  Pat the paste all over the meat and roast on a rack at 400 degrees with a little water in the bottom of the pan for moisture.  Turn after first side is brown.

 

This is the "Peking" style roasting method that makes you want to take a walk in China Town.  It is the same recipe (or similar) that they use on the ducks you find hanging in the windows of those neat little Chinese shops.

It is great for pork, chicken or duck.

Preheat Oven To: 400

Serves:  4

Serve With:  Oriental Vegetables, vegetable dumplings, rice or Pad Tai  and Sake.
