1 lb. ground beef

1 large onion

1 14 oz can red kidney beans

1 24 oz can tomatoes

1 tbsp. vinegar

1 tbsp. brown sugar

tbsp. paprika

1 tbsp. chili powder – more or less to taste

cup macaroni

Brown onion and beef – drain off fat. Add all other ingredients but macaroni.  Simmer approx. 2 hours.  Add macaroni hour before serving and continue to simmer. 

 

This was my mother-in-laws comfort food.  She served it on Saturday evenings after long country walks in the autumn or after tobogganing in the winter.  There was always fresh warm bread and slices of old cheddar on the table to accompany it. 

Preheat Oven To: 450

Serves:  4

Serve With:  Dry red wine and fresh white baguette or home made style bread.
