1 cup white sugar
¾ cup cooking oil
2 eggs
1 tsp. baking soda
½ tsp. salt
1 tsp. baking powder
1 tsp. vanilla
¾ cup all purpose flour
¾ cup whole wheat flour
1 cup walnuts
1 cup carrots – grated
½ tsp. nutmeg
1 tsp. cinnamon
Preheat Oven To: 450
Yield: 1 dozen muffins
Beat together sugar, oil and eggs. Mix dry ingredients. Add to wet. Stir in carrots and nuts. Bake at 375 degrees for 15 to 20 minutes.
