1 cup natural bran

cup flour

1 tsp. baking soda

tsp. salt

tsp. baking powder

1 egg

cup lightly packed brown sugar

cup vegetable or canola oil

1 cup buttermilk

2 tbsp. molasses

cup raisins

cup dried apricots – sliced

There is nothing like a bran muffin.  They're good for you, they taste good and they become a great fast food when you bake them in double lots and throw them in the freezer. Pull one out and zap it in the microwave for 30 seconds when you are late for work and don't have time for breakfast.

Preheat Oven To: 375

Yield:  1 dozen muffins

Combine bran, flour, baking soda, salt and baking powder in a mixing bowl.  Beat egg, brown sugar, oil, buttermilk, molasses, raisins, and apricots together thoroughly.  Add liquid ingredients all a once to dry ingredients. Stir just until moistened.  Fill greased or paper lined muffin cups full. Bake at 375 for 20 minutes or until top springs back when lightly touched.
