Bean Salad ala whatever you've got

cup Red kidney beans

c white kidney beans

c chick peas

cup lima beans 

Soak overnight in

1 tbsp. dill weed

3 cups water

tsp. crushed garlic

1 tbsp. salt

cup vinegar

This concoction can be made with whatever kind of dried beans you have on hand (except lentils).  It is wonderful served over shredded zucchini or lettuce and dalloped with fat free cottage cheese

Serves:  6- 8

Serve With: Lettuce, shredded zucchini and cottage cheese.

 
After soaking the above for at least 8 hours (get your sleep), dump it all into a pot, bring it to a boil and then simmer or 4 – 6 hours.  Drain and cool. 

Dress with 2 tbsp. of  fat free Italian dressing and serve on a bed of lettuce and shredded zucchini
