1 cup flour

2 tbsp. baking powder

1 tsp. salt

2 tsp. sugar

1 tbsp. salad oil

1 cup water

This is a crispy batter that can be used for just about anything.  It works especially well with oriental type dishes. 

Whisk all ingredients together.  Dip fish chunks, scallops or shrimps etc. into the batter with chop sticks and drop into hot oil.  Fry until golden brown.
