4 small trout, bass fillets or any other fish (except sole) that suits your fancy or you can find in the freezer

6 tsp. butter

2 Tbsp. olive oil

1 tsp. lemon juice

½ lb. sliced mushrooms

¾ cup chopped scallions

¼ cup fresh bread crumbs

This is another fishy, company came unexpected, story.  It was created on the fly and remains today...without the flies but still a tasty quickie.

Preheat Oven To: 425

Serves:  4

Serve With:  White Wine, Saffron rice, Minted peas

Salt, pepper and lightly flour fish.  Fry in butter and olive oil until golden brown but not cooked through. Remove Fish and add mushrooms and lemon, sauté 3 minutes.  Remove mushrooms and spread on bottom of baking dish.  Cook scallions 1 minute in butter.  Take out and brown breadcrumbs.  Arrange fish on top of mushrooms in baking dish and sprinkle with scallions and breadcrumbs.  Bake at 425 for 15 minutes.
